Cheers To The Summer Solstice With One of Our Seasonally-Inspired Sippers

Let’s raise a glass and toast to the longest day of the year! With the summer solstice just around the corner, we’re coming through with our favorite seasonal bevvies to try this year. From cocktails to mocktails, check out our full recipes and instructions for sipping into summer below!

Pinata 

For those daydreaming of a vacation in the tropics, try the Pinata! Teleporting imbibers to sun-soaked days on white sand beaches, this tequila-based elixir unites bold flavors with citrus notes and a touch of aromatic spice. 

  • 2 oz blanco tequila 
  • 1 oz fresh lime juice 
  • ½ oz pineapple juice 
  • ¼ oz agave nectar 
  • 3 dashes of Angostura bitters (float)

Add tequila, lime juice, pineapple, and agave nectar into a cocktail shaker with ice. Shake for 5 seconds, straining over ice and topping with three dashes of bitters. Garnish with pineapple fronds, a lime wedge, and tajin. 

Hugo Spritz 

Craving a delightful fizzy fusion? Then this is the bevvy for you! Light and refreshing in all aspects, vibrant floral notes of elderflower meets the smooth flavor of fresh mint, making for an Italian-inspired riff on the classic cocktail that you can’t miss this season. 

  • 2 oz prosecco 
  • 2 oz soda water 
  • 1.5 oz St. Germain elderflower liquor 
  • 8-10 mint leaves 

Add St. Germain and mint leaves into wine glass with ice. Top with prosecco and soda water, stirring gently. Garnish with mint sprig and lime wedge. 

MacNair’s Rose

For the whiskey lovers wanting the perfect poolside potion, we have you covered! Sophisticated and alluring, this seasonally-inspired riff on a Macnamara Rose plays into summer with a harmonious blend of fruit and florals, using Irish whiskey as the centerpiece for an edgy undertone.

  • 2 oz MacNair’s Irish whiskey 
  • ¾ oz Lillet Rose 
  • ½ oz Aperol 
  • 2 cucumber slices (muddled)
  • Pinch of Kosher salt 

Lightly muddle cucumber slices, stirring in Irish whiskey, Lillet Rose, and Aperol. Double strain into a coupe glass and garnish with a cucumber slice.  

Bubbly Jasmine Tea Spritzer

Spritz up tea time with a no-ABV option! A flora-influenced infusion combining herbal notes of Jasmine tea with the sweetness of golden syrup, rounded out with a splash of tonic water for a light libation that will keep you hydrated in the summertime heat. 

  • 8 oz cold-brewed Jasmine tea
  • 1 oz tonic water 
  • ¼ oz golden syrup 

Cold brew jasmine tea in a covered glass of water for at least 4 hours (overnight if possible). Pour brewed tea into a chilled highball glass with ice, stirring in golden syrup and topping with tonic water. Garnish with blueberries or edible flowers. 

Spicy Watermelon Slushie 

Cool down on hot summer days with this punchy mocktail! A fresh and fruity blend of watermelon gets kicked up a notch with jalapeno, infused with golden syrup and topped with soda water for the perfect icy hot refresher. 

  • 1 oz soda water 
  • ¼ cup fresh watermelon cubes 
  • ¼ cup frozen watermelon cubes 
  • ¼ jalapeno (with seeds)
  • ¼ oz golden syrup 

In a blender, combine fresh and frozen watermelon cubes and jalapeno. Blend, then strain and discard pulp. Stir in lime juice and simple syrup. Rim glasses with salt and tajin, filling ⅔ of the way and topping with sparkling water. Garnish with a lime wedge, watermelon slice, or jalapeno.
